Spring Mint Cupcakes

Spring is just around the corner!


I bought this vase at a thrift store for $0.45 and the flowers at the dollar store. Thrifty can be pretty!

Now for my latest pastry creation... I call them Spring Mint cupcakes. I'm super excited right now, partly because I had so much fun making them tonight (Thursday night) and partly because I just had to sample the goodies as I went along and now I'm all hopped up on sugar. WEEEEEEEEEEEEEEE!!! Right, okay then, let's see some sweet pics!





This is a recipe I partly came up with myself and this is the first time I have ever made frosting from scratch! It's devil's food chocolate cupcakes (from a mix) with a butter cream frosting that has just a hint of peppermint. I sprinkled crushed pastel-colored dinner mints on top after the photos were taken.







I've never done this kind of baking before, it's a ton of work and I had to improvise a lot. For example, I had no food coloring so I brought a little bit of milk to a boil in the microwave and then added pink sugar crystal sprinkles. The sprinkles turned the milk pink, then I added it to the white frosting and voila! I did the same for the green frosting. I'm so proud of myself right now for figuring all this stuff out. This is the first time I ever used a pastry bag with tips so I was playing around and testing out the variety of tips. (I used the frosting in a can before) I've never been much of an artist so the flowers look pretty lame but this isn't bad at all for my first try! And they taste so nummy. My guinea pig er... I mean Grandma thinks the frosting is out of this world. Seriously, she is intensely coveting the leftover frosting and has ordered me not to throw it out, lol.
